- 3-1/2 cup flour
- 1 cup sugar
- 250g unsalted butter
- lemon zest (as much as you like)
- 1/2 teaspoon salt
- 2 eggs and 1 egg yolk
- Mix all the ingredients above apart from the flour, then gradually add flour to it while kneading the mixture until it becomes a soft dough.
- Then with a normal rolling pin flatten the dough and then with the embroidered rolling pin roll it to the desired thickness before cutting out in the shape you like (flower, circle, square etc).
- Place it in the oven on 180C for about 10minutes (if you want crunchy on the outside and a bit soft on the inside) and 15-20minutes (if you want it to be golden brown completely crunchy)
